The Room Chef is responsible for the overall culinary operation of assigned restaurant to include budgeting, managing culinary staff and menu planning.
ESSENTIAL DUTIES AND RESPONSIBILITIES
Performing daily functions in relation to culinary operations
Ensure standard operating procedures are enforced to ensure food and menu specifications, guest safety, employee safety, food handling and food safety requirements, receiving and storage
Performs time edits on a daily basis
Orders product from inventory and directly from the vendor utilizing the Stratton Warren Inventory Purchasing system.
Trains, coaches and counsels employees as needed.
Must have knowledge and ability to work every station in the kitchen.
Maintains all food supplies for production.
Ensures all kitchen equipment is in proper working order.
Ensures that all products are prepared to proper specification, checking all sauces for proper flavor and texture.
Assigns kitchen team members to daily work schedule.
Ensures all proper food handling techniques are followed.
Ensures all work stations are clean and stocked at the end of the shift.
Works within established guidelines to maintain proper food cost.
Culinary school graduate preferred. Must have a minimum of 5 years in food and beverage management positions and thorough experience in the development of operating and capital budgets, staff planning, purchase and control of operating equipment and point of sale systems.
